Recipe makes approx. 20 cookies
Mix the salt, flour and baking powder in a bowl. Melt the butter in a saucepan. Add both quantities of sugar and stir until any lumps are dissolved. Stir in the egg, egg yolk and vanilla extract. Pour this mixture over the dry ingredients and stir until you have a smooth dough. Stir in the brunost chunks. Leave the dough to cool for half an hour to an hour.
Divide the dough into 20 equal pieces. Roll each one into a ball and flatten slightly. They will spread somewhat during cooking, so be sure to leave space between them.
Cook them at 165 °C for about 15-20 minutes.
