Carrot cake with brunost-icing

    Carrot cake

  • 2,5 dl sunflower oil
  • 3,3 dl sugar
  • 4 eggs
  • 0,5 tsp salt
  • 3,5 dl white flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 900 dl grated carrots (about 3 carrots)

    Icing

  • 100 g TINE Gudbrandsdalen, grated
  • 40 g butter
  • 180 g cream cheese
  • 3 dl powder sugar
Here is how you do it

Mix sugar and oil together. Add the eggs, one at a time. Mix the dry ingredients (baking soda, baking powder, salt, cinnamon and flour) together and sift it into the dough. Grate carrots and add it to the mixture. Pour the dough into a 22cm spring form.

Bake at 190 degrees for around 1 hour.

For the icing: Start by grating brunost. Melt butter and add the grated brunost. Stir until the brunost is melted. Stir together cream cheese, powder sugar and the brunost/butter mixture. Have the icing on the cake when the cake has cooled down. Decorate the cake with brunost hearts.

Tip: If you want even more brunost flavour, you can add some pieces of brunost (around 100 gram) in the dough before baking it.
